Our Process


We start each batch of Northern Lights Blue Cheese with fresh milk from a local heard of Brown Swiss cows. Brown Swiss are bread specifically for cheesemaking. With the high protein and butterfat content, the milk is perfect for our cheese, giving it a rich creamy texture and delicious buttery flavor.  More...
