At Northern Lights Artisan
Cheese we simply strive to produce the highest quality cheese for
our customer friends and family to enjoy.
The inspiration for our cheese
begins with our passion for healthy local food. We use only the
freshest local ingredients and natural sea salt. Our
salt comes from
the ancient salt pans of
Trapani, Italy, and is rich in the precious trace
minerals that are so vital to a healthy body.
A True Artisanal Blue Cheese
Each batch of Northern Lights Blue Cheese is
hand crafted in small 100-wheel
batches. We begin with fresh unpasteurized milk from
a locally farmed herd of Brown Swiss cows. The cows are allowed to roam
on pasture year round producing a nutrient rich milk that is
perfect for our cheese. The penicillium roqueforti that we use,
which produces
the beautiful blue marbling in our blue cheese is derived
from a gluten free source allowing our blue cheese to be 100%
gluten free. We then age our cheese a minimum of 4 months. This
is much longer than regular blues and contributes to its rich creamy texture and peppery taste.
